🎄✨ Caramelized Brussels Sprouts Christmas Skewers with Walnut Honey

Brussels Sprouts

500 g Brussels sprouts, trimmed and halved

2–3 tbsp extra-virgin olive oil

1 tbsp honey or date syrup

1 tbsp balsamic vinegar

2 garlic cloves, minced
-
½ tsp paprika (optional)
-
½ tsp dried thyme or oregano
-
Salt & black pepper
For the Walnut Honey Drizzle

3 tbsp honey (or date syrup for Mediterranean flavor)

2 tbsp olive oil
-
2 tbsp finely chopped walnuts
-
Zest of ½ lemon or orange
-
Pinch of cinnamon (optional but festive)
Skewer Add-ons (Mediterranean style)

Cherry tomatoes
-
Mini mozzarella balls or feta cubes
-
Fresh basil or parsley (optional)
👩🍳 Instructions
1. Prepare the Brussels Sprouts

Bring a pot of water to boil.

Blanch Brussels sprouts for 3 minutes to soften slightly.

Drain and pat dry.
2. Caramelize

In a bowl mix:

olive oil
-
honey
-
balsamic vinegar
-
garlic
-
thyme/oregano
-
paprika
-
salt + pepper
-

Toss sprouts in the mixture.

Spread on a baking tray cut-side down.
3. Roast
-
Bake at 220°C (425°F) for 18–22 minutes

Until they are:

golden
-
caramelized
-
slightly crispy on edges
-
Flip halfway for even browning.
4. Make the Walnut Honey Drizzle
In a small bowl combine:

honey
-
olive oil
-
chopped walnuts
-
lemon/orange zest
-
pinch of cinnamon
Warm 10 seconds in microwave (optional) to thin slightly.
5. Assemble the Skewers
On each skewer thread:

A roasted Brussels sprout
-
A cherry tomato
-
A mozzarella ball or small feta cube
-
Another sprout
(Or keep them fully Brussels-only if you want.)
6. Finish
Drizzle the walnut honey generously over the skewers.
Top with:

Fresh parsley

A light squeeze of lemon
