β INGREDIENTS
For the Crust

2 cups crushed digestive biscuits or graham crackers

4 tbsp melted butter or 2 tbsp butter + 2 tbsp olive oil

2 tbsp honey
-
Pinch of cinnamon
For the Cheesecake Layer
-
300 g cream cheese, softened
-
1 cup Greek yogurt (gives Mediterranean lightness)
-
Β½ cup honey or maple syrup
-
2 eggs
-
Juice of Β½ lemon
-
Zest of 1 lemon
-
1 tsp vanilla extract
For the Blueberry Topping
-
3 cups fresh or frozen blueberries
-
ΒΌ cup honey or sugar
-
1 tbsp lemon juice
-
1 tsp lemon zest
-
1 tbsp cornstarch mixed with 2 tbsp water (slurry)
π©βπ³ INSTRUCTIONS
1. Make the Crust

Mix crushed biscuits with melted butter/olive oil, honey, and cinnamon.

Press firmly into the bottom of a baking dish (9Γ13 inch or similar).

Bake at 180Β°C (350Β°F) for 8 minutes. Let cool slightly.
2. Make the Cheesecake Layer

Beat cream cheese until smooth and creamy.

Add Greek yogurt, honey, eggs, lemon juice, lemon zest, and vanilla.

Mix until fully combined and silky.

Pour over the cooled crust.
Bake
-
Bake at 160Β°C (320Β°F) for 30β35 minutes,
-
until the center is set but slightly jiggly.

Cool completely.
3. Make the Blueberry Topping

In a saucepan, add blueberries, honey/sugar, lemon juice, and zest.

Cook on medium heat until berries release juices (3β4 mins).

Add the cornstarch slurry and stir until thick and glossy (1β2 mins).

Let cool to room temperature.
4. Assemble

Pour the cooled blueberry topping over the cooled cheesecake layer.

Spread evenly.

Refrigerate at least 3β4 hours, overnight is best.
5. Serve
Cut into squares or wedges like in your image.
