💙🍋 Mediterranean Blueberry Cheesecake Dessert (Pan Style)

INGREDIENTS

For the Crust

  • 2 cups crushed digestive biscuits or graham crackers

  • 4 tbsp melted butter or 2 tbsp butter + 2 tbsp olive oil

  • 2 tbsp honey

  • Pinch of cinnamon


For the Cheesecake Layer

  • 300 g cream cheese, softened

  • 1 cup Greek yogurt (gives Mediterranean lightness)

  • ½ cup honey or maple syrup

  • 2 eggs

  • Juice of ½ lemon

  • Zest of 1 lemon

  • 1 tsp vanilla extract


For the Blueberry Topping

  • 3 cups fresh or frozen blueberries

  • ¼ cup honey or sugar

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)


👩‍🍳 INSTRUCTIONS


1. Make the Crust

  1. Mix crushed biscuits with melted butter/olive oil, honey, and cinnamon.

  2. Press firmly into the bottom of a baking dish (9×13 inch or similar).

  3. Bake at 180°C (350°F) for 8 minutes. Let cool slightly.


2. Make the Cheesecake Layer

  1. Beat cream cheese until smooth and creamy.

  2. Add Greek yogurt, honey, eggs, lemon juice, lemon zest, and vanilla.

  3. Mix until fully combined and silky.

  4. Pour over the cooled crust.

Bake

  • Bake at 160°C (320°F) for 30–35 minutes,

  • until the center is set but slightly jiggly.

  • Cool completely.


3. Make the Blueberry Topping

  1. In a saucepan, add blueberries, honey/sugar, lemon juice, and zest.

  2. Cook on medium heat until berries release juices (3–4 mins).

  3. Add the cornstarch slurry and stir until thick and glossy (1–2 mins).

  4. Let cool to room temperature.


4. Assemble

  1. Pour the cooled blueberry topping over the cooled cheesecake layer.

  2. Spread evenly.

  3. Refrigerate at least 3–4 hours, overnight is best.


5. Serve

Cut into squares or wedges like in your image.
Top with:

  • extra fresh blueberries

  • lemon zest

  • a drizzle of honey
