Healthy Nut & Seed Energy Cookies (Mediterranean Style)

Naturally sweet, protein-rich, full of fiber, and super easy!


🟡 INGREDIENTS (makes 12–14 cookies)

Dry Ingredients

  • 1 cup rolled oats

  • ¼ cup chopped almonds

  • ¼ cup chopped walnuts

  • 2 tbsp pistachios (optional but very Mediterranean)

  • 2 tbsp sunflower seeds

  • 2 tbsp pumpkin seeds

  • 1 tbsp chia seeds

  • 1 tbsp sesame seeds

  • ½ tsp cinnamon

  • Pinch of salt

Wet Ingredients

  • 2 medium ripe bananas, mashed

  • 3 tbsp honey or date syrup

  • 2 tbsp olive oil (mild/light flavor)

  • 1 tsp vanilla extract

Optional Mix-Ins

  • ¼ cup dried cranberries or raisins

  • 2 tbsp dark chocolate chips

  • 2 tbsp shredded coconut


🟢 DIRECTIONS

1. Prep

  • Preheat oven to 175°C (350°F).

  • Line a baking sheet with parchment paper.

2. Mix Dry Ingredients

In a bowl combine:

  • Oats

  • Nuts

  • Seeds

  • Cinnamon

  • Salt

Stir well.

3. Add Wet Ingredients

Add to the bowl:

  • Mashed bananas

  • Honey/date syrup

  • Olive oil

  • Vanilla

Mix until everything is evenly coated.
The mixture should be thick and sticky.

4. Shape the Cookies

  • Scoop spoonfuls of dough and flatten into cookie shapes.

  • These won’t spread, so shape them exactly how you want them.

5. Bake

  • Bake 14–16 minutes until lightly golden.

  • Let cool completely — they firm up as they cool.


🟣 STORAGE

  • Store 5 days in an airtight container

  • Refrigerate up to 10 days

  • Freeze up to 2 months
