🧄🐟 Garlic Butter Salmon with Spinach & Mushrooms in Creamy Mediterranean Sauce
⭐ Ingredients (Serves 3–4)
For the Salmon

4 salmon fillets
-
1 tbsp olive oil
-
Salt & black pepper
-
1 tsp paprika
-
½ tsp oregano
For the Creamy Mediterranean Sauce
-
2 tbsp butter
-
4–5 cloves garlic, minced
-
1 cup mushrooms, sliced
-
2 cups fresh spinach
-
1 cup cherry tomatoes (optional but very Mediterranean!)
-
¾ cup heavy cream or evaporated milk
-
⅓ cup grated Parmesan
-
1 tsp oregano
-
½ tsp thyme or basil
-
Salt & pepper to taste
-
Juice of ½ lemon
-
1–2 tbsp sun-dried tomatoes chopped (optional but amazing)
🥘 Instructions
1. Season & Cook the Salmon

Pat salmon dry.

Season with salt, pepper, paprika, and oregano.

Heat olive oil in a pan over medium heat.

Sear salmon 3–4 minutes per side until golden.

Remove and set aside.
2. Make the Garlic Butter Sauce
-
In the same pan, melt the butter.
-
Add garlic and sauté 30 seconds.

Add mushrooms and cook until softened (3–4 minutes).

Add spinach and let it wilt.

(Optional) Add sun-dried tomatoes and cherry tomatoes.
3. Add Cream + Seasonings

Pour in cream.
-
Stir in Parmesan, oregano, thyme, salt, pepper.

Simmer on low heat for 2–3 minutes until thickened.

Add a squeeze of lemon juice.
4. Combine
Place salmon back into the creamy sauce.
Spoon sauce over the fillets.
Simmer 2 minutes to heat through.
