🧄🐟 Garlic Butter Salmon with Spinach & Mushrooms in Creamy Mediterranean Sauce

⭐ Ingredients (Serves 3–4)

For the Salmon

  • 4 salmon fillets

  • 1 tbsp olive oil

  • Salt & black pepper

  • 1 tsp paprika

  • ½ tsp oregano

For the Creamy Mediterranean Sauce

  • 2 tbsp butter

  • 4–5 cloves garlic, minced

  • 1 cup mushrooms, sliced

  • 2 cups fresh spinach

  • 1 cup cherry tomatoes (optional but very Mediterranean!)

  • ¾ cup heavy cream or evaporated milk

  • ⅓ cup grated Parmesan

  • 1 tsp oregano

  • ½ tsp thyme or basil

  • Salt & pepper to taste

  • Juice of ½ lemon

  • 1–2 tbsp sun-dried tomatoes chopped (optional but amazing)


🥘 Instructions

1. Season & Cook the Salmon

  1. Pat salmon dry.

  2. Season with salt, pepper, paprika, and oregano.

  3. Heat olive oil in a pan over medium heat.

  4. Sear salmon 3–4 minutes per side until golden.

  5. Remove and set aside.


2. Make the Garlic Butter Sauce

  1. In the same pan, melt the butter.

  2. Add garlic and sauté 30 seconds.

  3. Add mushrooms and cook until softened (3–4 minutes).

  4. Add spinach and let it wilt.

  5. (Optional) Add sun-dried tomatoes and cherry tomatoes.


3. Add Cream + Seasonings

  1. Pour in cream.

  2. Stir in Parmesan, oregano, thyme, salt, pepper.

  3. Simmer on low heat for 2–3 minutes until thickened.

  4. Add a squeeze of lemon juice.


4. Combine

Place salmon back into the creamy sauce.
Spoon sauce over the fillets.
Simmer 2 minutes to heat through.


🍽️ Serve With

  • Orzo, couscous, or quinoa

  • Roasted vegetables

  • Mashed potatoes or cauliflower mash

  • Crusty Mediterranean bread
