1 cup cottage cheese
5 large eggs
½ cup milk (or unsweetened almond milk)
1 cup fresh spinach, chopped (or ½ cup frozen, thawed & squeezed dry)
½ cup grated mozzarella or feta cheese (Mediterranean option: feta)
¼ cup grated Parmesan (optional but great flavor)
1 small onion, finely chopped
2 garlic cloves, minced
Seasonings
1 tbsp olive oil
½ tsp oregano
½ tsp dried basil
¼ tsp paprika
Salt & black pepper to taste
Optional Mediterranean Add-Ins
¼ cup chopped sun-dried tomatoes
2 tbsp chopped olives
Fresh parsley or dill
½ cup roasted peppers
🥘 Instructions
1. Prepare the Pan
Preheat oven to 375°F (190°C).
Lightly grease a pie dish or baking dish with olive oil.
2. Sauté the Aromatics
Heat olive oil in a skillet.
Add onion and garlic; cook 2–3 minutes until soft.
Add spinach until just wilted (skip sautéing if using thawed frozen spinach).
Let cool slightly.
3. Blend the Egg Mixture
In a bowl, whisk together:
eggs
cottage cheese
milk
oregano
basil
paprika
salt & pepper
(You can also blend cottage cheese + eggs in a blender for an extra fluffy texture.)
4. Combine All Ingredients
Add spinach mixture to the egg mixture.
Stir in mozzarella/feta and Parmesan.
Add any optional Mediterranean add-ins.
5. Bake
Pour mixture into the prepared baking dish.
Bake 35–40 minutes, or until the top is golden and the center is set.
Let cool 5 minutes before slicing.
