🥕 Carrot Walnut Cake

🧺 Ingredients (8–10 slices)

  • 2 large eggs

  • ½ cup olive oil (or half olive oil + half yogurt)

  • ¾ cup raw cane sugar or honey

  • 1 tsp vanilla extract

  • Zest of 1 orange (Mediterranean touch)

  • 1½ cups finely grated carrots

  • 1 cup all-purpose flour (or half whole-wheat)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp ground cinnamon

  • ¼ tsp nutmeg

  • Pinch sea salt

  • ¾ cup chopped walnuts

Optional Add-Ins

  • 2 tbsp raisins or dried cranberries

  • 2 tbsp Greek yogurt (extra moist)


👩‍🍳 Instructions

  1. Preheat Oven
    Heat to 180°C / 350°F. Grease or line a cake pan.

  2. Mix Wet Ingredients
    Whisk eggs, olive oil, sugar, vanilla, and orange zest until smooth.

  3. Add Carrots
    Stir in grated carrots (and yogurt if using).

  4. Combine Dry Ingredients
    In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  5. Mix Batter
    Fold dry ingredients into wet ingredients just until combined.

  6. Add Walnuts
    Gently fold in chopped walnuts (and raisins if using).

  7. Bake
    Pour batter into pan.
    Bake 30–35 minutes, until a toothpick comes out clean.

  8. Cool & Serve
    Cool slightly, slice, and enjoy.
