Zero-Point Mediterranean Pancakes

Ingredients (Basic – Zero Points)

  • 2 large eggs

  • ½ cup fat-free Greek yogurt

  • ½ cup oats (rolled or quick)

  • ½ tsp baking powder

  • ½ tsp vanilla extract

  • Pinch of salt

All zero-point on most WW plans


Optional Mediterranean Flavor Add-Ins (Still Zero / Very Low)

  • Lemon zest (bright & fresh 🍋)

  • Cinnamon or cardamom

  • Orange zest

  • A few drops vanilla or almond essence


Instructions

  1. Blend

    • Add all ingredients to a blender or food processor.

    • Blend until smooth and slightly thick.

  2. Rest

    • Let batter sit 5 minutes so oats soften.

  3. Cook

    • Heat a non-stick pan over medium-low heat.

    • Lightly spray if needed.

    • Pour small pancakes (they cook best mini).

    • Cook 1–2 minutes per side until golden.


Serving Ideas (Zero / Low Point)

  • Fresh berries 🍓

  • Warm apple compote (no sugar)

  • Greek yogurt + lemon zest

  • Sugar-free honey or date syrup drizzle


Making 100 Pancakes (Holiday Batch)

  • Multiply recipe by 10–12

  • Cook, cool completely

  • Stack with parchment between

  • Freeze in zip bags

🔥 Reheat straight from freezer in pan, air fryer, or microwave.


Mediterranean Variations

  • Apple-Cinnamon: add grated apple + cinnamon

  • Orange-Vanilla: orange zest + vanilla
