🥒 Delicious Zucchini Rolls

Mediterranean Seasonal Snack

  • Serves: 4–6 (about 12 rolls)


🛒 Ingredients

Zucchini

  • 3 medium zucchini

  • 2 tbsp extra-virgin olive oil

  • Salt & black pepper

Filling

  • ¾ cup ricotta cheese

  • ¼ cup crumbled feta

  • 1 clove garlic, very finely minced or grated

  • 1 tbsp fresh dill or parsley, chopped

  • 1 tbsp fresh basil or mint, chopped

  • Zest of ½ lemon

  • Black pepper, to taste

Optional Add-Ins

  • Chopped sun-dried tomatoes

  • Toasted pine nuts or walnuts

  • Olive tapenade


👩‍🍳 Instructions

1️⃣ Prepare the Zucchini

  1. Slice zucchini lengthwise into thin strips using a mandoline or sharp knife.

  2. Lightly brush with olive oil and season with salt and pepper.

  3. Grill on a pan or bake at 200°C (400°F) for 8–10 minutes until just tender.

  4. Let cool slightly.


2️⃣ Make the Filling

In a bowl, mix ricotta, feta, garlic, herbs, lemon zest, and pepper until smooth.


3️⃣ Assemble Rolls

  1. Spread 1–2 teaspoons of filling on each zucchini strip.

  2. Add optional sun-dried tomatoes or nuts if using.

  3. Roll gently and place seam-side down.


4️⃣ Serve

  • Drizzle with olive oil

  • Garnish with fresh herbs

  • Serve warm or chilled

  • Vegan: use almond ricotta or hummus

  • Protein boost: add smoked salmon or grilled chicken strips

  • Extra flavor: drizzle with balsamic glaze or honey

  • Spicy: add chili flakes or harissa
