🍗 Garlic Chicken with Broccoli and Spinach

🛒 Ingredients

600 g (1.3 lb) chicken breast or thighs, cut into bite-size pieces

2½ tbsp extra-virgin olive oil

5 cloves garlic, minced
-
1 tsp dried oregano
-
½ tsp thyme
-
½ tsp smoked paprika
-
Salt & black pepper, to taste

1 cup broccoli florets
-
3 cups fresh spinach
-
¼ cup chicken broth or water
-
Juice of ½ lemon
-
Zest of ½ lemon (optional)

2 tbsp grated Parmesan (optional)
👩🍳 Instructions
1️⃣ Season & Sear Chicken

Heat olive oil in a large skillet over medium-high heat.

Season chicken with salt, pepper, oregano, thyme, and paprika.

Add chicken to pan and sear 4–5 minutes per side until golden.
2️⃣ Garlic & Veggies

Reduce heat to medium.

Add garlic and sauté 30 seconds until fragrant (do not burn).

Add broccoli and chicken broth; cover and steam 3–4 minutes until tender.
3️⃣ Finish with Spinach

Stir in spinach and cook until just wilted.

Add lemon juice and zest.

Adjust seasoning and sprinkle with Parmesan if using.
4️⃣ Serve

Drizzle with extra olive oil

Garnish with parsley or basil
