🍫 Mediterranean Homemade Crunch Bars

Ingredients

  • 2 cups puffed rice or brown rice cereal

  • 1 cup dark chocolate chips (70% cocoa preferred)

  • 2 tbsp extra-virgin olive oil or coconut oil

  • ¼ cup honey or date syrup

  • 1 tsp vanilla extract

  • Pinch of sea salt

Optional Add-Ins (Mediterranean touch)

  • 2 tbsp chopped pistachios or almonds

  • 1 tbsp sesame seeds

  • Grated orange zest (optional)


Instructions

  1. Prepare pan: Line an 8×8-inch pan with parchment paper.

  2. Melt chocolate: In a heatproof bowl, gently melt dark chocolate with olive oil until smooth.

  3. Sweeten: Stir honey, vanilla, and sea salt into melted chocolate.

  4. Add crunch: Fold in puffed rice and any optional add-ins until evenly coated.

  5. Press: Transfer mixture to prepared pan. Press firmly into an even layer.

  6. Chill: Refrigerate for 1–2 hours until fully set.

  7. Slice: Cut into bars or squares.


Serving & Storage

  • Store refrigerated up to 7 days

  • Serve chilled for extra crunch

  • Great for snacks, lunchboxes, or holiday treats

Variations

  • Dairy-free: Use dairy-free dark chocolate

  • Extra crunchy: Add crushed rice cakes

  • Nut-free: Skip nuts, add extra sesame
