🌿 Mediterranean Cabbage & Egg Croquettes
✅ Ingredients
3 cups finely shredded cabbage
2 large eggs
1 small onion, finely chopped
2–3 tbsp semolina or 2 tbsp flour or 2 tbsp breadcrumbs
1 small carrot, grated (optional but very good)
2 tbsp chopped parsley or dill
½ tsp salt
½ tsp black pepper
½ tsp paprika (optional)
Olive oil for frying or brushing
👩🍳 Instructions
1. Prepare the cabbage
Shred cabbage very thinly.
Sprinkle with a pinch of salt and squeeze lightly with your hands to soften it.
2. Make the mixture
In a bowl combine:
Softened cabbage
Eggs
Onion
Semolina/flour/breadcrumbs
Parsley or dill
Pepper, paprika, salt
Mix until everything sticks together.
If mixture seems too soft, add 1 more tbsp breadcrumbs.
3. Shape the croquettes
Take a handful of mixture.
Shape into small cylinders or patties (as shown in the picture).
4. Cook
Pan-Fry (Mediterranean style)
Heat 2–3 tbsp olive oil.
Fry croquettes on medium heat until golden on all sides (about 3–4 minutes per side).
OR Bake (healthier)
Brush with olive oil.
Bake at 200°C (390°F) for 20–25 minutes, flipping halfway.

Greek yogurt + garlic dip
Tzatziki
Lemon wedges
Fresh salad
Tomato-cucumber mix with olive oil
💡 Tips
Add grated cheese (feta or mozzarella) for richer flavor.
Add chili flakes if you want it spicy.
These freeze very well — perfect for meal prep!
