🍌 Mediterranean Banana Oat Muffins

Ingredients

  • 2 ripe bananas, mashed

  • 2 large eggs

  • ⅓ cup extra-virgin olive oil (or melted butter)

  • ¼ cup honey or maple syrup

  • 1 tsp vanilla extract

  • 1½ cups rolled oats

  • ½ cup whole-wheat flour (or oat flour)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp cinnamon

  • ¼ tsp sea salt

Optional Add-Ins

  • Chopped walnuts or almonds

  • Dark chocolate chips

  • Raisins or chopped dates

  • Lemon or orange zest (Mediterranean touch)


Instructions

  1. Preheat oven: 175°C (350°F). Line a muffin tin with paper liners or lightly grease.

  2. Wet ingredients: In a bowl, whisk mashed bananas, eggs, olive oil, honey, and vanilla until smooth.

  3. Dry ingredients: In another bowl, mix oats, flour, baking powder, baking soda, cinnamon, and salt.

  4. Combine: Stir dry ingredients into wet until just combined. Fold in any add-ins.

  5. Fill: Spoon batter evenly into muffin cups (about ¾ full).

  6. Bake: 18–22 minutes, until golden and a toothpick comes out clean.

  7. Cool: Let rest 5 minutes, then transfer to a rack.
