🍚 Mediterranean Onion Beef Fried Rice

🧺 Ingredients

  • 2 cups cooked rice (preferably day-old; basmati or jasmine)

  • 250 g (½ lb) beef sirloin or flank steak, thinly sliced

  • 1 large onion, thinly sliced

  • 3 tablespoons extra virgin olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon paprika

  • ½ teaspoon ground cumin

  • ½ teaspoon ground black pepper

  • ½ teaspoon dried oregano or thyme

  • Salt, to taste

  • 2 eggs, lightly beaten

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon lemon juice

  • Optional: chili flakes for heat


👩‍🍳 Instructions

  1. Season the beef:
    Toss sliced beef with paprika, cumin, black pepper, oregano, and a pinch of salt.

  2. Cook the onions:
    Heat 2 tablespoons olive oil in a large pan or wok over medium heat.
    Add onions and sauté until soft and golden (6–8 minutes). Remove and set aside.

  3. Cook the beef:
    In the same pan, add remaining olive oil.
    Sear the beef on high heat for 2–3 minutes until just cooked. Remove and set aside.

  4. Scramble the eggs:
    Lower heat to medium. Add garlic and sauté for 30 seconds.
    Push to the side, add eggs, and scramble lightly.

  5. Fry the rice:
    Add cooked rice, breaking up clumps. Stir-fry for 3–4 minutes until heated through and lightly crisped.

  6. Combine:
    Return onions and beef to the pan. Toss everything together well.

  7. Finish:
    Add lemon juice, parsley, and chili flakes if using. Adjust salt to taste.


🌿 Serving Suggestions

  • Serve with Mediterranean cucumber yogurt salad

  • Top with crumbled feta or toasted pine nuts

  • Add a side of grilled vegetables

  • Use leftover roast beef for extra tenderness

  • Swap rice for brown rice or cauliflower rice

  • Add bell peppers or spinach for more veggies
