This light Mediterranean-inspired shrimp salad is made with crisp cucumbers, tender shrimp, olive oil, herbs, and a creamy yogurt-based dressing—fresh, healthy, and ideal for warm days.


🫒 Ingredients

Salad

  • 450 g (1 lb) cooked shrimp, peeled & deveined

  • 2 large cucumbers, thinly sliced or diced

  • 2 tablespoons red onion, finely chopped

  • 2 tablespoons fresh dill or parsley, chopped

Creamy Dressing

  • ½ cup plain Greek yogurt

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon fresh lemon juice or red wine vinegar

  • 1 small garlic clove, minced

  • Salt & black pepper, to taste

Optional Add-Ins

  • Cherry tomatoes, halved

  • Crumbled feta cheese

  • Kalamata olives, sliced


🍋 Instructions

  1. Prepare the Shrimp
    If shrimp are raw, boil in salted water 2–3 minutes until pink. Drain and cool.

  2. Mix the Dressing
    In a bowl, whisk yogurt, olive oil, lemon juice, garlic, salt, and pepper until smooth.

  3. Assemble the Salad
    In a large bowl, combine shrimp, cucumbers, red onion, and herbs.

  4. Add Dressing
    Pour dressing over the salad and gently toss to coat.

  5. Chill & Serve
    Refrigerate 15–20 minutes for best flavor. Adjust seasoning before serving.
