🛒 Ingredients

  • 1½ cups almond flour

  • 1 cup unsweetened shredded coconut

  • ⅓ cup dark chocolate chips (70% or higher)

  • ⅓ cup honey or maple syrup

  • ¼ cup extra-virgin olive oil or melted coconut oil

  • 1 large egg

  • 1 tsp vanilla extract

  • ½ tsp baking soda

  • Pinch sea salt

  • Optional topping: whole almonds or sliced almonds


👩‍🍳 Instructions

  1. Preheat oven to 175°C / 350°F. Line a baking tray with parchment paper.

  2. Mix dry ingredients
    In a bowl, combine almond flour, shredded coconut, baking soda, and salt.

  3. Mix wet ingredients
    In another bowl, whisk egg, honey, olive oil, and vanilla until smooth.

  4. Combine
    Add wet mixture to dry ingredients. Fold in dark chocolate chips.

  5. Shape cookies
    Scoop tablespoon-sized dough onto tray. Gently flatten. Press an almond on top if desired.

  6. Bake for 12–15 minutes until edges are lightly golden.

  7. Cool on tray for 10 minutes before moving—they firm up as they cool.


🍫 Optional Chocolate Drizzle

Melt 2 tbsp dark chocolate and drizzle over cooled cookies for a classic Almond Joy finish.
