3 cups vegetable or chicken broth

¾ cup milk, half-and-half, or light cream

¼ cup heavy cream (optional, for extra creaminess)

1 tbsp lemon juice

2 tbsp fresh parsley or thyme, chopped

Heat olive oil and butter in a large pot over medium heat.
Add onion and cook 4–5 minutes until soft. Add garlic and cook 30 seconds. -

Simmer

Finish
