🍄🌿 Creamy Mushroom Soup

🛒 Ingredients (Serves 4–6)

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp butter (optional, adds richness)

  • 1 medium onion, finely chopped

  • 4 cloves garlic, minced

  • 500 g (1 lb) mushrooms (button, cremini, or mixed), sliced

  • 1 tsp dried thyme or oregano

  • ½ tsp black pepper

  • ¾ tsp sea salt (adjust to taste)

  • 3 cups vegetable or chicken broth

  • ¾ cup milk, half-and-half, or light cream

  • ¼ cup heavy cream (optional, for extra creaminess)

  • 1 tbsp lemon juice

  • 2 tbsp fresh parsley or thyme, chopped

Optional Enhancers

  • ¼ cup grated Parmesan

  • 1 tsp soy sauce or tamari (deep umami flavor)


👩‍🍳 Instructions

  1. Sauté Aromatics
    Heat olive oil and butter in a large pot over medium heat.
    Add onion and cook 4–5 minutes until soft. Add garlic and cook 30 seconds.

  2. Cook Mushrooms
    Add mushrooms, thyme, salt, and pepper.
    Cook 8–10 minutes until mushrooms release moisture and turn golden.

  3. Simmer
    Pour in broth and bring to a gentle boil.
    Reduce heat and simmer 10–12 minutes.

  4. Blend (Optional)
    Blend part or all of the soup until creamy, leaving some chunks if desired.

  5. Finish
    Stir in milk and cream. Simmer 2–3 minutes.
    Add lemon juice, parsley, and Parmesan if using. Adjust seasoning.
