Salmon Meatballs

450 g (1 lb) fresh salmon, skin removed & finely chopped

½ cup breadcrumbs (or almond flour for gluten-free)

1 egg

¼ cup grated Parmesan

2 tbsp olive oil

2 cloves garlic, minced

2 tbsp fresh parsley or dill, chopped

Zest of 1 lemon

1 tbsp lemon juice
-
½ tsp paprika
-
½ tsp dried oregano
-
Salt & black pepper, to taste
Creamy Avocado Sauce

1 ripe avocado
-
¼ cup Greek yogurt or sour cream
-
1 clove garlic
-
2 tbsp lemon juice
-
2 tbsp olive oil
-
Salt & black pepper, to taste

Water, to thin (1–3 tbsp)

Preheat Oven
Preheat oven to 200°C (400°F). Line a baking tray with parchment. -
Make Salmon Mixture
In a bowl, combine chopped salmon, breadcrumbs, egg, Parmesan, olive oil, garlic, parsley, lemon zest & juice, paprika, oregano, salt, and pepper. -
Form Meatballs
Shape mixture into golf-ball-sized meatballs and place on tray. -
Bake
Bake for 14–16 minutes, until cooked through and lightly golden. -
Make Avocado Sauce
Blend avocado, yogurt, garlic, lemon juice, olive oil, salt, and pepper until smooth. Add water to desired consistency. -
Serve
Drizzle meatballs with creamy avocado sauce or serve on the side.
