🛒 Ingredients (Serves 4)

Salmon Meatballs

  • 450 g (1 lb) fresh salmon, skin removed & finely chopped

  • ½ cup breadcrumbs (or almond flour for gluten-free)

  • 1 egg

  • ¼ cup grated Parmesan

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 2 tbsp fresh parsley or dill, chopped

  • Zest of 1 lemon

  • 1 tbsp lemon juice

  • ½ tsp paprika

  • ½ tsp dried oregano

  • Salt & black pepper, to taste

Creamy Avocado Sauce

  • 1 ripe avocado

  • ¼ cup Greek yogurt or sour cream

  • 1 clove garlic

  • 2 tbsp lemon juice

  • 2 tbsp olive oil

  • Salt & black pepper, to taste

  • Water, to thin (1–3 tbsp)


👩‍🍳 Instructions

  1. Preheat Oven
    Preheat oven to 200°C (400°F). Line a baking tray with parchment.

  2. Make Salmon Mixture
    In a bowl, combine chopped salmon, breadcrumbs, egg, Parmesan, olive oil, garlic, parsley, lemon zest & juice, paprika, oregano, salt, and pepper.

  3. Form Meatballs
    Shape mixture into golf-ball-sized meatballs and place on tray.

  4. Bake
    Bake for 14–16 minutes, until cooked through and lightly golden.

  5. Make Avocado Sauce
    Blend avocado, yogurt, garlic, lemon juice, olive oil, salt, and pepper until smooth. Add water to desired consistency.

  6. Serve
    Drizzle meatballs with creamy avocado sauce or serve on the side.
