🍝🌿 Chicken, Mushroom, and Spinach Lasagna
Mediterranean Style | Lightened-Up | Oven-Baked
🛒 Ingredients (Serves 6–8)
Lasagna Layers

9–12 lasagna sheets (regular or whole-wheat)

2 tbsp extra-virgin olive oil

2 chicken breasts, cooked & shredded

250 g (9 oz) mushrooms, sliced
-
3 cloves garlic, minced
-
2 cups fresh spinach
-
1 tsp dried oregano
-
½ tsp dried thyme
-
Salt & black pepper, to taste
Creamy White Sauce
-
2 tbsp butter or olive oil
-
2 tbsp flour (or cornstarch for gluten-free)
-
2½ cups milk (or half-and-half)
-
½ cup grated Parmesan cheese
-
Pinch of nutmeg (optional)
-
Salt & white pepper, to taste
Cheese Layer
-
1½ cups ricotta or cottage cheese
-
1 egg
-
½ cup shredded mozzarella
-
2 tbsp fresh parsley or basil, chopped
👩🍳 Instructions

Prepare Pasta
Cook lasagna sheets according to package directions (unless no-boil). Drain and set aside. -
Cook Filling
Heat olive oil in a pan.
Sauté mushrooms for 5–6 minutes until golden.
Add garlic, oregano, thyme, salt, and pepper.
Stir in chicken and spinach; cook until spinach wilts. Set aside. -
Make White Sauce
Melt butter in a saucepan. Whisk in flour and cook 1 minute.
Slowly whisk in milk until smooth.
Simmer until thickened. Stir in Parmesan, nutmeg, salt, and pepper. -
Cheese Mix
Combine ricotta, egg, mozzarella, and herbs in a bowl. -
Assemble Lasagna
Preheat oven to 180°C (350°F).
In a baking dish:-
Spread white sauce

Add lasagna sheets

Add chicken-mushroom-spinach mixture
-
Add ricotta mixture
Repeat layers, finishing with sauce and mozzarella.

Bake
Cover with foil and bake 30 minutes.
Uncover and bake 10–15 minutes until golden and bubbly. -
Rest & Serve
Let stand 10 minutes before slicing.
