Garlic Cauliflower and Mushrooms

🧄 Mediterranean Garlic Cauliflower & Mushrooms

🧄 Ingredients

  • 1 medium head cauliflower, cut into florets

  • 8 oz (225 g) mushrooms (cremini or button), halved

  • 4 tbsp extra virgin olive oil

  • 5 cloves garlic, thinly sliced or minced

  • 1 tsp smoked paprika

  • ½ tsp dried thyme or oregano

  • ¼ tsp chili flakes (optional)

  • Salt & freshly ground black pepper to taste

  • Zest of ½ lemon

  • 1–2 tbsp fresh lemon juice

  • 2 tbsp fresh parsley, chopped


🔪 Instructions

  1. Preheat oven to 425°F (220°C).
    Line a large baking tray with parchment paper.

  2. Season vegetables
    In a bowl, toss cauliflower and mushrooms with olive oil, garlic, paprika, thyme, chili flakes, salt, and pepper.

  3. Roast
    Spread evenly on the tray in a single layer.
    Roast 20–25 minutes, stirring once halfway, until golden and tender with crispy edges.

  4. Finish
    Remove from oven.
    Add lemon zest, lemon juice, and parsley. Toss gently.

  5. Serve
    Taste and adjust seasoning.
