🫒 Grilled Shrimp Bowl with Avocado, Corn Salsa & Creamy Sauce

🛒 Ingredients
Grilled Shrimp

450 g (1 lb) large shrimp, peeled & deveined

2 tbsp olive oil

2 cloves garlic, minced

Zest + juice of ½ lemon

1 tsp paprika
-
½ tsp oregano
-
¼ tsp cumin
-
Salt & black pepper, to taste
Corn Salsa
-
1½ cups sweet corn (grilled or sautéed)
-
1 small red bell pepper, diced
-
2 tbsp red onion, finely chopped
-
2 tbsp fresh parsley or cilantro, chopped
-
Juice of ½ lime or lemon
-
1 tbsp olive oil
-
Salt, to taste
Creamy Mediterranean Sauce
-
½ cup plain Greek yogurt
-
1 tbsp tahini
-
1 tbsp lemon juice
-
1 small garlic clove, grated
-
Salt, to taste
-
Water, as needed to thin

1 ripe avocado, sliced

2 cups cooked quinoa or brown rice

Mixed greens (optional)
👩🍳 Instructions
1️⃣ Marinate & Grill Shrimp

Toss shrimp with olive oil, garlic, lemon zest & juice, paprika, oregano, cumin, salt, and pepper.

Grill on a hot grill pan or outdoor grill for 2–3 minutes per side until pink and lightly charred. Set aside.
2️⃣ Make Corn Salsa

In a bowl, combine corn, bell pepper, onion, herbs, citrus juice, olive oil, and salt.

Toss well and set aside.
3️⃣ Prepare Creamy Sauce

Whisk Greek yogurt, tahini, lemon juice, garlic, and salt.

Add water a little at a time until drizzle-able.
4️⃣ Assemble the Bowls

Add quinoa/rice to each bowl.

Top with shrimp, avocado slices, corn salsa, and greens.

Drizzle generously with creamy Mediterranean sauce.
