🫒 Cranberry Walnut Chickpea Salad

with Orange Vinaigrette (Mediterranean Style)

🛒 Ingredients

Salad

  • 2 cups cooked chickpeas (or 1½ cans, drained & rinsed)

  • ½ cup dried cranberries (unsweetened if possible)

  • ½ cup walnuts, lightly toasted & chopped

  • ¼ cup red onion, finely diced

  • ½ cup cucumber, diced

  • ¼ cup fresh parsley or mint, chopped

  • Optional: mixed greens or baby spinach

Orange Vinaigrette

  • Zest of 1 orange

  • ¼ cup fresh orange juice

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp apple cider vinegar or red wine vinegar

  • 1 tsp Dijon mustard

  • 1 tsp honey or maple syrup (optional)

  • Salt & black pepper, to taste


👩‍🍳 Instructions

  1. In a large bowl, combine chickpeas, cranberries, walnuts, onion, cucumber, and herbs.

  2. In a small bowl or jar, whisk together orange zest, orange juice, olive oil, vinegar, Dijon, honey, salt, and pepper.

  3. Pour vinaigrette over salad and toss gently to coat.

  4. Taste and adjust seasoning.

  5. Chill 10–15 minutes before serving for best flavor.

  • Pair with grilled chicken, shrimp, or salmon

  • Stuff into whole-wheat pita
