Spinach & Cheese Bake

Ingredients

  • 500 g (1 lb) frozen spinach, thawed and well-drained (or ~1½ lbs fresh spinach, cooked down)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled feta cheese
  • ½ cup grated Parmesan cheese
  • 4 large eggs
  • ½ cup milk
  • ½ cup all-purpose flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp baking powder
  • ½ tsp salt (adjust depending on feta)
  • ½ tsp black pepper
  • Optional: pinch of nutmeg or dried dill for extra flavor

Instructions

  • Preheat oven
    Set oven to 375°F (190°C). Line or grease an 8×8 or 9×9 baking dish.
  • Prepare spinach
    Make sure spinach is very well drained—squeeze out excess water using a towel.
  • Cook aromatics
    Heat olive oil in a pan. Sauté onion for 3–4 minutes until soft, then add garlic and cook 30 seconds.
  • Mix wet ingredients
    In a large bowl, whisk eggs, milk, ricotta, salt, pepper, and optional seasoning.
  • Combine everything
    Stir in spinach, cooked onion/garlic, mozzarella, feta, and Parmesan.
  • Add dry ingredients
    Fold in flour and baking powder until evenly combined.
  • Bake
    Pour mixture into prepared dish and smooth top.
    Bake 35–45 minutes until golden brown and set in the center.
  • Cool & slice
    Let it rest for 10–15 minutes before cutting into squares.

Tips

  • If it seems watery, the spinach wasn’t drained enough—this step is key
  • Add cooked bacon or mushrooms if you want extra flavor
