Spinach & Cheese Bake
Ingredients
- 500 g (1 lb) frozen spinach, thawed and well-drained (or ~1½ lbs fresh spinach, cooked down)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup crumbled feta cheese
- ½ cup grated Parmesan cheese
- 4 large eggs
- ½ cup milk
- ½ cup all-purpose flour
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp baking powder
- ½ tsp salt (adjust depending on feta)
- ½ tsp black pepper
- Optional: pinch of nutmeg or dried dill for extra flavor
Instructions
- Preheat oven
Set oven to 375°F (190°C). Line or grease an 8×8 or 9×9 baking dish.
- Prepare spinach
Make sure spinach is very well drained—squeeze out excess water using a towel.
- Cook aromatics
Heat olive oil in a pan. Sauté onion for 3–4 minutes until soft, then add garlic and cook 30 seconds.
- Mix wet ingredients
In a large bowl, whisk eggs, milk, ricotta, salt, pepper, and optional seasoning.
- Combine everything
Stir in spinach, cooked onion/garlic, mozzarella, feta, and Parmesan.
- Add dry ingredients
Fold in flour and baking powder until evenly combined.
- Bake
Pour mixture into prepared dish and smooth top.
Bake 35–45 minutes until golden brown and set in the center.
- Cool & slice
Let it rest for 10–15 minutes before cutting into squares.
