🛒 Ingredients

2 cups fresh spinach, finely chopped (or frozen, well-drained)

1 cup crumbled feta cheese

1 large egg

¼ cup grated Parmesan cheese

2 tbsp olive oil

1 clove garlic, minced
-
½ tsp dried oregano

¼ tsp black pepper

Optional: chili flakes or sesame seeds
👩🍳 Instructions

Preheat oven
Preheat to 190°C / 375°F.
Line a baking sheet with parchment paper. -
Mix the batter
In a bowl, combine spinach, feta, egg, Parmesan, olive oil, garlic, oregano, and pepper.
Mix until well combined. -
Shape crisps
Scoop small spoonfuls onto the baking sheet.
Flatten slightly to form thin rounds. -
Bake
Bake for 15–18 minutes, until edges are golden and centers are set. -
Cool & crisp
Let rest 5 minutes—they crisp up more as they cool.
