These bite-sized snacks combine sautéed spinach, herbs, and gooey cheese, coated in a crispy crust. Perfect as an appetizer, snack, or party food.


🛒 Ingredients (Serves 4)

  • 2 cups fresh spinach (or 1 cup frozen, thawed & squeezed dry)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (plus extra for coating)
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp onion, finely chopped
  • ½ tsp dried oregano or Italian seasoning
  • Salt & black pepper, to taste
  • 2–3 tbsp olive oil (for frying or brushing)

👩‍🍳 Instructions

  1. Cook spinach
    Sauté spinach in a pan until wilted. Let cool, then squeeze out excess moisture and chop finely.
  2. Mix filling
    In a bowl, combine spinach, mozzarella, Parmesan, breadcrumbs, egg, garlic, onion, seasoning, salt, and pepper. Mix well.
  3. Shape bites
    Form small balls or patties. If mixture is sticky, chill for 10–15 minutes.
  4. Coat for crispiness
    Roll each bite lightly in breadcrumbs.
  5. Cook (choose method):
    • Pan-fry: Cook in a little oil until golden on all sides
    • Bake: 200°C (400°F) for 15–18 minutes
    • Air fry: 180°C (350°F) for 10–12 minutes
  6. Serve
    Enjoy hot with yogurt dip, marinara, or garlic sauce.
