These bite-sized snacks combine sautéed spinach, herbs, and gooey cheese, coated in a crispy crust. Perfect as an appetizer, snack, or party food.
🛒 Ingredients (Serves 4)
- 2 cups fresh spinach (or 1 cup frozen, thawed & squeezed dry)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (plus extra for coating)
- 1 egg
- 2 cloves garlic, minced
- 2 tbsp onion, finely chopped
- ½ tsp dried oregano or Italian seasoning
- Salt & black pepper, to taste
- 2–3 tbsp olive oil (for frying or brushing)

- Cook spinach
Sauté spinach in a pan until wilted. Let cool, then squeeze out excess moisture and chop finely. - Mix filling
In a bowl, combine spinach, mozzarella, Parmesan, breadcrumbs, egg, garlic, onion, seasoning, salt, and pepper. Mix well. - Shape bites
Form small balls or patties. If mixture is sticky, chill for 10–15 minutes. - Coat for crispiness
Roll each bite lightly in breadcrumbs. - Cook (choose method):
- Pan-fry: Cook in a little oil until golden on all sides
- Bake: 200°C (400°F) for 15–18 minutes
- Air fry: 180°C (350°F) for 10–12 minutes
- Serve
