🛒 Ingredients (Serves 4–5)
- ½ lb (250g) lean ground beef
- 1 small onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 red bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 can (400g) diced tomatoes
- 2 tbsp tomato paste
- 4 cups beef broth
- ½–1 cup cooked rice (white or brown)
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt & black pepper, to taste
- 1 tbsp olive oil (if needed)
Optional toppings:
- Shredded cheese (cheddar or mozzarella)
- Fresh parsley
- A dollop of sour cream

- Cook the beef
In a large pot, cook ground beef over medium heat until browned. Drain excess fat if needed. - Sauté veggies
Add onion and peppers. Cook 4–5 minutes until softened.
Stir in garlic and cook for 1 minute. - Build the soup base
Add diced tomatoes, tomato paste, broth, Italian seasoning, paprika, salt, and pepper. - Simmer
Bring to a boil, then reduce heat and simmer for 15–20 minutes. - Add rice
Stir in cooked rice and simmer for another 5 minutes. - Finish & serve
