Instructions
- Marinate the chicken
In a bowl, whisk honey, lime juice, olive oil, garlic, paprika, cumin, salt, and pepper.
Coat chicken and let it marinate for at least 20–30 minutes (longer = more flavor). - Cook the chicken
Grill, pan-sear, or bake at 200°C (400°F) for 18–22 minutes until fully cooked.
Let rest, then slice into strips. - Prepare avocado rice
In a bowl, mash avocado slightly (leave some chunks).
Mix in rice, lime juice, cilantro, and salt. Stir until creamy and well combined. -

Use a bowl or food ring:- First layer: avocado rice
- Second layer: sliced honey lime chicken
- Top with tomatoes, corn, onions, and herbs
