For the chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp honey
  • 2 tbsp lime juice (fresh)
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt & black pepper to taste

For the avocado rice:

  • 1 ripe avocado
  • 1 tbsp lime juice
  • 2 tbsp chopped cilantro (optional)
  • Salt to taste

Optional toppings:

  • Cherry tomatoes (diced)
  • Corn kernels
  • Red onion (finely chopped)
  • Extra cilantro
  • Lime wedges

Instructions

  1. Marinate the chicken
In a bowl, whisk honey, lime juice, olive oil, garlic, paprika, cumin, salt, and pepper.
Coat chicken and let it marinate for at least 20–30 minutes (longer = more flavor).
  2. Cook the chicken
Grill, pan-sear, or bake at 200°C (400°F) for 18–22 minutes until fully cooked.
Let rest, then slice into strips.
  3. Prepare avocado rice
In a bowl, mash avocado slightly (leave some chunks).
Mix in rice, lime juice, cilantro, and salt. Stir until creamy and well combined.
  4. Assemble the stack
Use a bowl or food ring:

    • First layer: avocado rice
    • Second layer: sliced honey lime chicken
    • Top with tomatoes, corn, onions, and herbs

Press gently, then lift the mold for a neat stacked look.

  5. Serve
Finish with a squeeze of lime and a drizzle of any leftover sauce.

Tips for Best Flavor
