🍯🍋 Mediterranean Honey Lime Chicken & Avocado Rice Stack

🧄 Ingredients
Honey Lime Chicken
1½ lb (700 g) boneless skinless chicken breasts or thighs
2 tbsp extra-virgin olive oil
Zest of 1 lime
3 tbsp fresh lime juice
2 tbsp honey (or date syrup)
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp dried oregano
½ tsp ground cumin
Salt & black pepper to taste
Mediterranean Rice Layer
1½ cups cooked basmati or jasmine rice
1 tbsp olive oil
1 tbsp fresh lemon juice
2 tbsp chopped fresh parsley or cilantro
Salt to taste
Avocado Layer
2 ripe avocados, diced
1 tbsp lime juice
Pinch of salt
Optional: 1 tbsp Greek yogurt or tahini for creaminess
Fresh Toppings (Optional)
Cherry tomatoes, diced
Cucumber, finely chopped
Crumbled feta cheese
Chili flakes
🔪 Instructions
Marinate the chicken
In a bowl, whisk olive oil, lime zest, lime juice, honey, garlic, paprika, oregano, cumin, salt, and pepper.
Add chicken and marinate for 15–30 minutes.Cook the chicken
Heat a grill pan or skillet over medium heat.
Cook chicken 5–6 minutes per side until golden and cooked through.
Rest 5 minutes, then slice.Prepare the rice
In a bowl, toss warm rice with olive oil, lemon juice, parsley, and salt.Prepare the avocado
Gently mix avocado with lime juice, salt, and optional yogurt or tahini.Assemble the stacks
Use a ring mold or small bowl:Bottom layer: rice
Middle layer: sliced honey lime chicken
Top layer: avocado mixture
Finish & serve
Garnish with tomatoes, cucumber, feta, and chili flakes.
