🍎 Apple Salad with Honeycrisp Apples, Celery, Grapes, Pecans & Dried Cranberries (Mediterranean Style)

📝 Ingredients (Serves 4)

For the Salad

  • 2 large Honeycrisp apples, chopped or thinly sliced

  • 2 celery stalks, thinly sliced

  • 1 cup red or green grapes, halved

  • 1/3 cup pecans, toasted & roughly chopped

  • 1/4 cup dried cranberries (or golden raisins)

  • 1/4 cup feta crumbles (Mediterranean twist – optional but delicious)

  • 2 tbsp chopped fresh parsley or mint

Mediterranean Creamy Dressing

  • 1/3 cup Greek yogurt

  • 1 tbsp olive oil

  • 1 tbsp honey or pure maple syrup

  • 1 tbsp lemon juice

  • 1/2 tsp lemon zest

  • Pinch of salt & pepper

  • Optional: 1 tsp Dijon mustard for a tangy note


🍽️ Instructions

1. Make the Dressing

In a small bowl, whisk together:

  • Greek yogurt

  • Olive oil

  • Honey

  • Lemon juice & zest

  • Salt

  • Pepper

  • Dijon mustard (if using)

Set aside.


2. Prepare the Salad

In a large bowl combine:

  • Honeycrisp apples

  • Celery

  • Grapes

  • Pecans

  • Dried cranberries

  • Feta (optional)

  • Fresh parsley or mint


3. Dress the Salad

Pour dressing over the mixture.
Gently toss until everything is coated.


4. Serve

Enjoy immediately for the best crisp texture OR chill for 20 minutes for deeper flavor.

Before serving, garnish with:

  • Extra pecans

  • A drizzle of honey
