Ingredients:

  • 4 boneless, skinless chicken breasts
  • 12-16 asparagus spears (trimmed)
  • 4 slices of mozzarella or provolone cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 teaspoon Italian seasoning (optional)
  • Toothpicks (for sealing the chicken)

Instructions:

  1. Prep the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Butterfly each chicken breast: Slice horizontally through the middle, being careful not to cut all the way through, and open it like a book.
  2. Season the Chicken:
    • Drizzle both sides of the chicken with olive oil.
    • Season with garlic powder, paprika, salt, pepper, and Italian seasoning.
  3. Stuff the Chicken:
    • Place 3-4 asparagus spears and one slice of cheese in the center of each chicken breast.
    • Fold the chicken breast over the filling and secure it with toothpicks to prevent it from opening while cooking.
  4. Sear the Chicken (optional for extra flavor):
    • Heat a large oven-safe skillet over medium-high heat with a tablespoon of olive oil.
    • Sear the chicken for 2-3 minutes on each side until golden brown.
  5. Bake the Chicken:
    • Transfer the skillet with the chicken to the preheated oven, or place the chicken breasts on a baking sheet if you didn’t sear them.
    • Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted.
  6. Serve:
    • Remove the toothpicks before serving. Enjoy your asparagus-stuffed chicken with a side of roasted veggies, mashed potatoes, or a fresh salad!
