Ingredients:
- 4 boneless, skinless chicken breasts
- 12-16 asparagus spears (trimmed)
- 4 slices of mozzarella or provolone cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 1 teaspoon Italian seasoning (optional)
- Toothpicks (for sealing the chicken)
Instructions:
- Prep the Chicken:
- Preheat your oven to 375°F (190°C).
- Butterfly each chicken breast: Slice horizontally through the middle, being careful not to cut all the way through, and open it like a book.
- Season the Chicken:
- Drizzle both sides of the chicken with olive oil.
- Season with garlic powder, paprika, salt, pepper, and Italian seasoning.
- Stuff the Chicken:
- Place 3-4 asparagus spears and one slice of cheese in the center of each chicken breast.
- Fold the chicken breast over the filling and secure it with toothpicks to prevent it from opening while cooking.
- Sear the Chicken (optional for extra flavor):
- Heat a large oven-safe skillet over medium-high heat with a tablespoon of olive oil.
- Sear the chicken for 2-3 minutes on each side until golden brown.
- Bake the Chicken:
- Transfer the skillet with the chicken to the preheated oven, or place the chicken breasts on a baking sheet if you didn’t sear them.
- Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted.
- Serve:
- Remove the toothpicks before serving. Enjoy your asparagus-stuffed chicken with a side of roasted veggies, mashed potatoes, or a fresh salad!
Tips:
- You can add a slice of ham or prosciutto for an extra savory layer.
- For a bit of crunch, sprinkle some breadcrumbs or Parmesan on top before baking.
Enjoy your tasty stuffed chicken!
