This fresh Mediterranean-inspired egg salad is creamy without mayo, packed with protein, healthy fats, and vibrant greens—perfect for a light meal or wholesome snack.


🌿 Ingredients

  • 4 large eggs, hard-boiled and chopped

  • 1 ripe avocado, diced

  • 2 cups fresh baby spinach, finely chopped

  • 1–2 tablespoons extra-virgin olive oil

  • 1 tablespoon fresh lemon juice

  • 1 small garlic clove, minced (optional)

  • 1 tablespoon fresh parsley or dill, chopped

  • Salt, to taste

  • Black pepper, to taste

  • ¼ teaspoon paprika or chili flakes (optional)

    Place eggs in a saucepan, cover with water, bring to a boil, then simmer for 9–10 minutes. Cool, peel, and chop.
