Baked Blueberry Cottage Cheese Breakfast Bowls

A high-protein breakfast that’s creamy, lightly sweet, and easy to make.

Ingredients (4 servings)

  • 2 cups cottage cheese
  • 2 large eggs
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)
  • 1 cup fresh or frozen blueberries
  • ½ cup rolled oats
  • 1 tsp baking powder
  • Pinch of salt

Optional Toppings

  • Extra blueberries
  • Chopped almonds, walnuts, or pecans
  • Greek yogurt
  • Maple syrup drizzle

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease 4 oven-safe ramekins or a small baking dish.
  3. In a bowl, whisk together cottage cheese, eggs, maple syrup, vanilla, cinnamon, and salt.
  4. Stir in oats and baking powder.
  5. Fold in most of the blueberries, reserving a few for the top.
  6. Divide the mixture among the ramekins and sprinkle the remaining blueberries on top.
  7. Bake for 25–30 minutes, until set and lightly golden around the edges.
  8. Let cool for 5 minutes before serving.
