Baked Blueberry Cottage Cheese Breakfast Bowls
A high-protein breakfast that’s creamy, lightly sweet, and easy to make.
Ingredients (4 servings)
- 2 cups cottage cheese
- 2 large eggs
- 2 tbsp maple syrup or honey
- 1 tsp vanilla extract
- ½ tsp cinnamon (optional)
- 1 cup fresh or frozen blueberries
- ½ cup rolled oats
- 1 tsp baking powder
- Pinch of salt
Optional Toppings
- Extra blueberries
- Chopped almonds, walnuts, or pecans
- Greek yogurt
- Maple syrup drizzle
Instructions
- Preheat oven to 375°F (190°C).
- Lightly grease 4 oven-safe ramekins or a small baking dish.
- In a bowl, whisk together cottage cheese, eggs, maple syrup, vanilla, cinnamon, and salt.
- Stir in oats and baking powder.
- Fold in most of the blueberries, reserving a few for the top.
- Divide the mixture among the ramekins and sprinkle the remaining blueberries on top.
- Bake for 25–30 minutes, until set and lightly golden around the edges.
- Let cool for 5 minutes before serving.
