🍌 Banana Blueberry Breakfast Cookies (Mediterranean-Style)

Soft, fruity, wholesome, and made with whole grains, nuts, and healthy fats — no refined sugar.


Ingredients (Makes 10–12 cookies)

  • 2 large ripe bananas, mashed

  • 1 cup rolled oats (old-fashioned)

  • 1/2 cup fresh or frozen blueberries (do not thaw if frozen)

  • 1/4 cup chopped walnuts or almonds

  • 2 tbsp extra-virgin olive oil or melted coconut oil

  • 1 tbsp honey (optional, for extra sweetness)

  • 1/2 tsp cinnamon

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional boosts:

    • 1 tbsp chia seeds

    • 1 tbsp flaxseed meal

    • 2 tbsp shredded coconut


🥣 Instructions

1. Preheat

  • Heat oven to 350°F (175°C).

  • Line a baking sheet with parchment paper.

2. Mix Wet Ingredients

  • In a bowl, mash the bananas until smooth.

  • Add olive oil, honey (if using), vanilla, and cinnamon. Mix well.

3. Add Dry Ingredients

  • Add oats, nuts, and a pinch of salt.

  • Fold in the blueberries gently to avoid breaking them.

4. Shape the Cookies

  • Scoop about 2 tablespoons of dough per cookie.

  • Flatten slightly with a spoon — these will not spread while baking.

5. Bake

  • Bake for 15–18 minutes, or until golden around the edges.

6. Cool Completely

  • Let cool on the tray 10 minutes so they firm up.
