🍌 Banana Blueberry Breakfast Cookies (Mediterranean-Style)

2 tbsp extra-virgin olive oil or melted coconut oil

1 tbsp honey (optional, for extra sweetness)

🥣 Instructions
1. Preheat

Heat oven to 350°F (175°C).

Line a baking sheet with parchment paper.
2. Mix Wet Ingredients

In a bowl, mash the bananas until smooth.

Add olive oil, honey (if using), vanilla, and cinnamon. Mix well.
3. Add Dry Ingredients

Add oats, nuts, and a pinch of salt.

Fold in the blueberries gently to avoid breaking them.
4. Shape the Cookies

Scoop about 2 tablespoons of dough per cookie.

Flatten slightly with a spoon — these will not spread while baking.
5. Bake

6. Cool Completely
