🛒 Ingredients

  • 1 cup full-fat Greek yogurt (very thick, strained)

  • ½ cup fresh blueberries, finely chopped

  • 2 tbsp vanilla protein powder (low-carb / sugar-free)

  • 1 tbsp chia seeds

  • 1 tbsp almond flour

  • 1–2 tbsp powdered erythritol or monk fruit (to taste)

  • ½ tsp vanilla extract

  • Pinch of lemon zest (Mediterranean touch 🍋)

Optional Coating

  • ¼ cup sugar-free white or dark chocolate, melted
    or

  • Finely chopped pistachios or almonds


👩‍🍳 Instructions

  1. In a bowl, mix Greek yogurt, protein powder, sweetener, vanilla, and lemon zest until smooth.

  2. Fold in blueberries, chia seeds, and almond flour.

  3. Scoop tablespoon-sized portions onto a parchment-lined tray.

  4. Freeze for 1–2 hours until firm.

  5. Optional: dip in melted chocolate or roll in nuts, then return to freezer for 10 minutes.
