Ingredients (Makes 12–15 skewers)

Brussels Sprouts

  • 500 g Brussels sprouts, trimmed and halved

  • 2–3 tbsp extra-virgin olive oil

  • 1 tbsp honey or date syrup

  • 1 tbsp balsamic vinegar

  • 2 garlic cloves, minced

  • ½ tsp paprika (optional)

  • ½ tsp dried thyme or oregano

  • Salt & black pepper

For the Walnut Honey Drizzle

  • 3 tbsp honey (or date syrup for Mediterranean flavor)

  • 2 tbsp olive oil

  • 2 tbsp finely chopped walnuts

  • Zest of ½ lemon or orange

  • Pinch of cinnamon (optional but festive)

Skewer Add-ons (Mediterranean style)

  • Cherry tomatoes

  • Mini mozzarella balls or feta cubes

  • Fresh basil or parsley (optional)


👩‍🍳 Instructions

1. Prepare the Brussels Sprouts

  1. Bring a pot of water to boil.

  2. Blanch Brussels sprouts for 3 minutes to soften slightly.

  3. Drain and pat dry.


2. Caramelize

  1. In a bowl mix:

    • olive oil

    • honey

    • balsamic vinegar

    • garlic

    • thyme/oregano

    • paprika

    • salt + pepper

  2. Toss sprouts in the mixture.

  3. Spread on a baking tray cut-side down.


3. Roast

  • Bake at 220°C (425°F) for 18–22 minutes

  • Until they are:

    • golden

    • caramelized

    • slightly crispy on edges

Flip halfway for even browning.


4. Make the Walnut Honey Drizzle

In a small bowl combine:

  • honey

  • olive oil

  • chopped walnuts

  • lemon/orange zest

  • pinch of cinnamon

Warm 10 seconds in microwave (optional) to thin slightly.


5. Assemble the Skewers

On each skewer thread:

  • A roasted Brussels sprout

  • A cherry tomato

  • A mozzarella ball or small feta cube

  • Another sprout

(Or keep them fully Brussels-only if you want.)


6. Finish

Drizzle the walnut honey generously over the skewers.

Top with:

  • Extra chopped walnuts

  • Fresh parsley

  • A light squeeze of lemon


🍽 Serve With

  • Greek yogurt dipping sauce

  • Pomegranate arils for extra color

  • A drizzle of balsamic glaze
