🛒 Ingredients

  • 2 cups pumpkin, peeled & cubed

  • 2 medium sweet potatoes, cubed

  • 3 tbsp extra-virgin olive oil

  • 1 tbsp honey or maple syrup

  • 1 tsp ground cumin

  • ½ tsp smoked paprika

  • ½ tsp sea salt

  • ¼ tsp black pepper

Topping

  • ⅓ cup feta cheese, crumbled

  • ¼ cup walnuts, chopped

  • 1 tbsp fresh parsley or thyme

  • Optional: drizzle of balsamic glaze or lemon zest


👩‍🍳 Instructions

  1. Preheat oven to 200°C / 400°F. Line a baking tray.

  2. Season vegetables
    Toss pumpkin and sweet potato with olive oil, honey, cumin, paprika, salt, and pepper.

  3. Roast
    Spread in a single layer. Roast 30–35 minutes, flipping once, until golden and caramelized.

  4. Add crunch
    Sprinkle walnuts over the tray and roast 5 more minutes.

  5. Finish
    Remove from oven. Top with feta and fresh herbs.

  6. Serve
    Add balsamic glaze or lemon zest if desired.
