Ingredients

  • Asparagus: 1 pound 500 g, with woody ends trimmed.
  • Olive Oil: 3 tablespoons of high-quality extra virgin.
  • Garlic: 1 tablespoon finely minced (about 4 cloves).
  • Salt: 3/4 teaspoon preferably kosher.
  • Black Pepper: 1/4 teaspoon freshly cracked.
  • Mozzarella Cheese: 1 1/4 cups finely shredded.

Instructions

  • Preheat your oven to 425°F (220°C). Lightly spray a baking sheet with nonstick cooking oil to prevent sticking.
  • Arrange the asparagus spears in a single layer on the prepared baking sheet and set aside.
  • In a small mixing bowl, combine the olive oil, minced garlic, salt, and cracked black pepper. Mix well until thoroughly combined.
  • Drizzle the garlic and olive oil mixture over the asparagus, ensuring each spear is evenly coated.
  • Place the baking sheet in the oven and roast the asparagus for 10-15 minutes, watching for a vibrant color and tenderness.
  • Once removed from the oven, sprinkle the finely shredded mozzarella cheese over the asparagus. Return it to the oven, using the broil or grill setting, until the cheese melts and turns golden brown, approximately 4-5 minutes.
  • Adjust the seasoning with additional salt and pepper if desired, and serve immediately to enjoy the best flavor and texture.
