Ingredients:
Meatloaf
1 lb (450g) ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1 small onion, finely chopped
2 garlic cloves, minced
2 tbsp ketchup
1 tsp Worcestershire sauce
1 tsp dried thyme or parsley
Salt and pepper to taste
Mashed Potatoes
4 large potatoes, peeled and cubed
1/2 cup milk or cream
2 tbsp butter
Salt and pepper to taste
Topping:
1 cup shredded cheddar cheese
Optional: Fresh parsley or thyme for garnish
Instructions
1. Prepare the Meatloaf:
Preheat oven to 375°F (190°C).
In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, thyme, salt, and pepper.
Shape the mixture into small loaf shapes and place them on a greased or foil-lined baking dish.
2. Bake the Meatloaf:
Bake for 25-30 minutes or until fully cooked.
3. Make the Mashed Potatoes:
While the meatloaf bakes, boil potatoes in salted water until tender (about 15 minutes).
Drain and mash the potatoes with milk, butter, salt, and pepper.
4. Assemble the Dish:
Spread the mashed potatoes evenly in a baking dish.
Place the cooked meatloaf on top of the mashed potatoes.
Sprinkle shredded cheddar cheese over the meatloaf.
5. Bake Again:
Return to the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
6. Garnish and Serve:
Sprinkle fresh herbs on top for garnish. Serve warm and enjoy!
