🥔🧀 Cheesy Taco Potatoes (Mediterranean-Inspired)

🛒 Ingredients

Potatoes

  • 1 kg (2.2 lb) potatoes, scrubbed & cubed

  • 3 tbsp extra-virgin olive oil

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • ½ tsp dried oregano

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

Taco-Style Topping

  • 250 g ground beef or chicken

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp paprika

  • 1 tsp cumin

  • ½ tsp chili powder (adjust to taste)

  • ½ tsp salt

Cheesy Finish

  • 1½ cups shredded mozzarella, Monterey Jack, or a blend

  • ¼ cup crumbled feta (optional Mediterranean touch)

Fresh Toppings

  • Chopped parsley or cilantro

  • Diced tomatoes

  • Sliced olives (optional)

  • Greek yogurt or tzatziki (instead of sour cream)


🔪 Instructions

1. Roast the Potatoes

  1. Preheat oven to 220°C (425°F).

  2. Toss potatoes with olive oil, paprika, cumin, oregano, garlic powder, salt, and pepper.

  3. Spread on a lined baking tray.

  4. Roast 30–35 minutes, flipping halfway, until golden and crispy.


2. Cook the Taco Meat

  1. Heat olive oil in a skillet over medium heat.

  2. Sauté onion until soft; add garlic.

  3. Add ground meat, breaking it up.

  4. Stir in spices and salt; cook until browned. Set aside.


3. Assemble & Bake

  1. Transfer roasted potatoes to a baking dish.

  2. Spoon taco meat evenly over potatoes.

  3. Sprinkle shredded cheese and feta on top.

  4. Bake at 190°C (375°F) for 10–15 minutes, until cheese melts.


4. Garnish & Serve

  • Finish with herbs, tomatoes, olives, and a dollop of yogurt or tzatziki.
