Chinese Chicken Cabbage Stir-Fry (Mediterranean Style)
Fast, healthy, one-pan, under 20 minutes!
Ingredients
For the chicken:
500 g chicken breast, thinly sliced
1 tbsp olive oil
1 tbsp soy sauce (or coconut aminos)
1 tsp garlic powder
½ tsp black pepper
½ tsp paprika (Mediterranean touch)
For the stir-fry:
3 cups shredded cabbage
1 medium carrot, julienned
1 small onion, sliced
3–4 cloves garlic, minced
1 tbsp fresh ginger, minced
1 red bell pepper, thinly sliced
2 tbsp olive oil
½ cup chopped green onions
¼ cup chopped fresh parsley or cilantro
1 tbsp sesame seeds (optional)
Mediterranean-Chinese Sauce:
2 tbsp soy sauce
1 tbsp lemon juice
1 tbsp rice vinegar (or apple cider vinegar)
1 tbsp honey
1 tsp sesame oil
½ tsp oregano
½ tsp chili flakes
2–3 tbsp water
Instructions
Marinate the chicken (5 minutes):
Mix chicken with olive oil, soy sauce, garlic powder, pepper, and paprika. Set aside.Make the sauce:
Whisk together soy sauce, lemon juice, vinegar, honey, sesame oil, oregano, chili flakes, and water.Cook the chicken:
Heat 1 tbsp olive oil in a skillet or wok.
Add chicken and cook 4–5 minutes until browned.
Remove to a plate.Sauté aromatics:
Add another tablespoon of olive oil.
Add garlic, ginger, and onion → stir for 1 minute.Add vegetables:
Add cabbage, carrots, and bell pepper.
Stir-fry 4–5 minutes until cabbage starts to soften but stays crisp.Combine everything:
Return chicken to the pan.
Pour the sauce over and toss to coat.
Cook 2–3 minutes until glossy and heated through.Finish:
Add green onions and parsley.
Sprinkle sesame seeds if desired.
