🧀 Cottage Cheese & Spinach Crustless Quiche (Mediterranean)

🛒 Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)

  • 5 large eggs

  • 2 cups fresh spinach, chopped (or frozen, well-drained)

  • ½ cup crumbled feta cheese

  • ¼ cup grated Parmesan (optional but delicious)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • ½ tsp dried oregano

  • ¼ tsp nutmeg (optional)

  • ½ tsp salt (adjust if feta is salty)

  • ½ tsp black pepper

  • Optional add-ins: sliced olives, sun-dried tomatoes, fresh dill or parsley


👩‍🍳 Instructions

  1. Preheat oven
    Preheat to 180°C / 350°F.
    Lightly grease a baking dish or pie pan with olive oil.

  2. Sauté vegetables
    Heat olive oil in a pan.
    Sauté onion for 3–4 minutes until soft.
    Add garlic and spinach, cook until wilted. Let cool slightly.

  3. Blend the base
    In a bowl or blender, mix cottage cheese and eggs until smooth (or lightly chunky if you prefer texture).

  4. Combine
    Stir in spinach mixture, feta, Parmesan, oregano, nutmeg, salt, and pepper.

  5. Bake
    Pour into prepared dish.
    Bake for 35–40 minutes, until set in the center and lightly golden on top.

  6. Rest & serve
    Let cool 10 minutes before slicing.
