🛒 Ingredients

1 cup cottage cheese (full-fat or low-fat)

5 large eggs

2 cups fresh spinach, chopped (or frozen, well-drained)

½ cup crumbled feta cheese

¼ cup grated Parmesan (optional but delicious)

1 small onion, finely chopped

2 cloves garlic, minced

2 tbsp olive oil

½ tsp dried oregano

¼ tsp nutmeg (optional)

½ tsp salt (adjust if feta is salty)

½ tsp black pepper

Optional add-ins: sliced olives, sun-dried tomatoes, fresh dill or parsley
👩🍳 Instructions

Preheat oven
Preheat to 180°C / 350°F.
Lightly grease a baking dish or pie pan with olive oil. -
Sauté vegetables
Heat olive oil in a pan.
Sauté onion for 3–4 minutes until soft.
Add garlic and spinach, cook until wilted. Let cool slightly. -
Blend the base
In a bowl or blender, mix cottage cheese and eggs until smooth (or lightly chunky if you prefer texture). -
Combine
Stir in spinach mixture, feta, Parmesan, oregano, nutmeg, salt, and pepper. -
Bake
Pour into prepared dish.
Bake for 35–40 minutes, until set in the center and lightly golden on top. -
Rest & serve
Let cool 10 minutes before slicing.
