Creamy Dressing

½ cup plain Greek yogurt

1 tablespoon extra-virgin olive oil

If shrimp are raw, boil in salted water 2–3 minutes until pink. Drain and cool. -
Mix the Dressing
In a bowl, whisk yogurt, olive oil, lemon juice, garlic, salt, and pepper until smooth. -
Assemble the Salad
In a large bowl, combine shrimp, cucumbers, red onion, and herbs. -
Add Dressing
