🍗 Crispy Greek Chicken Tenders

🛒 Ingredients (Serves 4)
Chicken Marinade

1 kg (2 lbs) chicken tenders or sliced chicken breasts

3 tbsp Greek yogurt
-
2 tbsp olive oil
-
3–4 garlic cloves, minced
-
1 tbsp lemon juice
-
1 tsp lemon zest
-
1 ½ tsp dried oregano
-
1 tsp paprika
-
1 tsp salt
-
½ tsp black pepper
Crispy Coating
-
1 cup breadcrumbs (Panko for extra crispiness)
-
½ cup crushed cornflakes OR crushed pita chips (very Mediterranean & crunchy!)
-
½ tsp oregano
-
½ tsp garlic powder
-
½ tsp paprika
-
2–3 tbsp grated Parmesan or crumbled feta (optional but amazing)
For Baking / Air Frying

Olive oil spray
🔪 Instructions
1. Marinate the Chicken

In a bowl, mix:
-
Greek yogurt
-
olive oil
-
garlic
-
lemon juice + zest
-
oregano, paprika
-
salt & pepper
-
-
Add chicken tenders and coat well.
-
Let marinate at least 20 minutes, or up to 8 hours for more flavor.
2. Prepare the Crispy Coating
In a shallow bowl, combine:

breadcrumbs
-
crushed cornflakes (or pita chips)
-
oregano
-
garlic powder
-
paprika
-
Parmesan/feta (optional)
3. Coat the Chicken

Remove chicken from the marinade.
-
Press each tender into the coating mixture, covering all sides.

Place on a baking sheet or air fryer basket.
-
Spray lightly with olive oil for maximum crunch.
4. Cook
Oven
-
Preheat to 220°C / 425°F.
-
Bake 15–20 minutes, flipping halfway.
Air Fryer
-
200°C / 400°F
-
Air fry 10–12 minutes, shaking halfway.
Chicken should be golden, crispy, and fully cooked.
