🍗 Crispy Greek Chicken Tenders

Crispy • Herby • High-protein • Mediterranean comfort food


🛒 Ingredients (Serves 4)

Chicken Marinade

  • 1 kg (2 lbs) chicken tenders or sliced chicken breasts

  • 3 tbsp Greek yogurt

  • 2 tbsp olive oil

  • 3–4 garlic cloves, minced

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 ½ tsp dried oregano

  • 1 tsp paprika

  • 1 tsp salt

  • ½ tsp black pepper

Crispy Coating

  • 1 cup breadcrumbs (Panko for extra crispiness)

  • ½ cup crushed cornflakes OR crushed pita chips (very Mediterranean & crunchy!)

  • ½ tsp oregano

  • ½ tsp garlic powder

  • ½ tsp paprika

  • 2–3 tbsp grated Parmesan or crumbled feta (optional but amazing)

For Baking / Air Frying

  • Olive oil spray


🔪 Instructions

1. Marinate the Chicken

  1. In a bowl, mix:

    • Greek yogurt

    • olive oil

    • garlic

    • lemon juice + zest

    • oregano, paprika

    • salt & pepper

  2. Add chicken tenders and coat well.

  3. Let marinate at least 20 minutes, or up to 8 hours for more flavor.


2. Prepare the Crispy Coating

In a shallow bowl, combine:

  • breadcrumbs

  • crushed cornflakes (or pita chips)

  • oregano

  • garlic powder

  • paprika

  • Parmesan/feta (optional)


3. Coat the Chicken

  1. Remove chicken from the marinade.

  2. Press each tender into the coating mixture, covering all sides.

  3. Place on a baking sheet or air fryer basket.

  4. Spray lightly with olive oil for maximum crunch.


4. Cook

Oven

  • Preheat to 220°C / 425°F.

  • Bake 15–20 minutes, flipping halfway.

Air Fryer

  • 200°C / 400°F

  • Air fry 10–12 minutes, shaking halfway.

Chicken should be golden, crispy, and fully cooked.


🍋 Serve With

  • Homemade tzatziki

  • Lemon wedges

  • Greek village salad (tomato, cucumber, feta)

  • Roasted potatoes with oregano

  • Warm pita bread


✨ Optional Mediterranean Variations

  • Add za’atar to the coating

  • Coat in sesame seeds for a Middle Eastern crunch

  • Swap paprika for smoked paprika

  • Add fresh dill to the marinade
