🥦 Crispy Roasted Cauliflower (Mediterranean Style)

🧾 Ingredients

  • 1 large head cauliflower, cut into florets

  • 3 tbsp extra-virgin olive oil

  • 3 cloves garlic, minced

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • ½ tsp dried oregano or thyme

  • ½ tsp sea salt (or to taste)

  • ¼ tsp black pepper

  • Zest of 1 lemon

  • 2 tbsp grated Parmesan or nutritional yeast (optional)

For Serving (Optional but Amazing)

  • Fresh parsley, chopped

  • Crumbled feta cheese

  • Tahini or garlic yogurt sauce


👩‍🍳 Instructions

  1. Preheat Oven

    • Preheat to 425°F (220°C) for maximum crispiness.

    • Line a baking tray with parchment paper.

  2. Season the Cauliflower

    • In a large bowl, toss cauliflower with olive oil, garlic, paprika, cumin, oregano, salt, pepper, and lemon zest until evenly coated.

  3. Roast

    • Spread florets in a single layer (don’t overcrowd).

    • Roast for 30–35 minutes, flipping halfway, until deeply golden and crispy on edges.

  4. Finish & Serve

    • Sprinkle with Parmesan or nutritional yeast while hot.

    • Finish with fresh parsley and a squeeze of lemon juice.
