🍲 Crockpot Marry Me Chicken Macaroni Soup (Mediterranean Style)

Chicken
1.5 lbs (700g) boneless chicken breasts or thighs
1 tbsp olive oil
1 tsp paprika
1 tsp dried oregano
1/2 tsp thyme
Salt & pepper
Soup Base
1 medium onion, diced
4 cloves garlic, minced
1 red bell pepper, diced
1 cup sun-dried tomatoes (drained & chopped)
4 cups chicken broth
1 cup cherry tomatoes (optional)
1 tsp chili flakes (optional)
1 tbsp lemon juice
1/2 cup cream or evaporated milk
1/2 cup grated Parmesan
1/3 cup cream cheese (optional for extra silkiness)
Pasta
2 cups dry small macaroni or ditalini
(You’ll add this near the end)
Finishing
Fresh basil
Fresh parsley
More Parmesan
Olive oil drizzle
Optional: feta for a Mediterranean twist
🍳 Instructions
1. Season the Chicken
Rub chicken with:
Olive oil, paprika, oregano, thyme, salt, and pepper.
Place in the crockpot.
2. Build the Crockpot Base
Add to the crockpot:
Onion
Garlic
Bell pepper
Sun-dried tomatoes
Chicken broth
Cherry tomatoes (if using)
Lemon juice
Chili flakes
Cover and cook:
Low 6–7 hours or High 3–4 hours
3. Shred the Chicken
Remove cooked chicken, shred with two forks, and return to the crockpot.
4. Make It Creamy
Stir in:
Cream
Parmesan
Cream cheese (optional)
Mix until melted and smooth.
5. Add the Macaroni
Add dry pasta directly to the crockpot.
Cook on High for 12–18 minutes, stirring occasionally, until pasta is tender.
(If too thick, add a splash of extra broth.)
6. Finish with Mediterranean Flair
Stir in:
Fresh chopped basil
Fresh parsley
