🛒 Ingredients
Zucchini

3 medium zucchini
-
2 tbsp extra-virgin olive oil

Salt & black pepper
Filling
-
¾ cup ricotta cheese
-
¼ cup crumbled feta
-
1 clove garlic, very finely minced or grated
-
1 tbsp fresh dill or parsley, chopped
-
1 tbsp fresh basil or mint, chopped
-
Zest of ½ lemon
-
Black pepper, to taste
Optional Add-Ins

Chopped sun-dried tomatoes
-
Toasted pine nuts or walnuts

Olive tapenade
👩🍳 Instructions
1️⃣ Prepare the Zucchini

Slice zucchini lengthwise into thin strips using a mandoline or sharp knife.

Lightly brush with olive oil and season with salt and pepper.

Grill on a pan or bake at 200°C (400°F) for 8–10 minutes until just tender.

Let cool slightly.
2️⃣ Make the Filling
In a bowl, mix ricotta, feta, garlic, herbs, lemon zest, and pepper until smooth.
3️⃣ Assemble Rolls

Spread 1–2 teaspoons of filling on each zucchini strip.

Add optional sun-dried tomatoes or nuts if using.

Roll gently and place seam-side down.
4️⃣ Serve

Drizzle with olive oil

Garnish with fresh herbs

Serve warm or chilled
