🛒 Ingredients

500 g (1 lb) chicken breast, sliced

2 tbsp extra-virgin olive oil

1 small onion, sliced
-
3 cloves garlic, minced
-
250 g (8 oz) mushrooms, sliced

1 tsp paprika
-
½ tsp black pepper
-
½ tsp sea salt
-
1 tsp Dijon mustard
-
1 cup chicken broth
-
½ cup Greek yogurt (or light sour cream)

1 tbsp lemon juice
-
Fresh parsley, chopped
👩🍳 Instructions

Sear chicken
Heat 1 tbsp olive oil in a large skillet over medium heat.
Add chicken, season with salt & pepper, and cook until golden. Remove and set aside. -
Sauté vegetables
Add remaining olive oil. Cook onion and mushrooms until soft and browned.
Stir in garlic and paprika. -
Build sauce
Add Dijon mustard and chicken broth. Simmer 5–7 minutes until slightly thickened. -
Make it creamy
Lower heat. Stir in Greek yogurt and lemon juice until smooth (do not boil). -
Combine
Return chicken to skillet. Simmer 5 minutes until coated and tender. -
Finish
Garnish with fresh parsley and serve.
