- ¼ teaspoon red pepper flakes, or more to taste
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper

- 1½ cups cherry tomatoes
- ½ cup green olives, pitted
- 1 lemon, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 2–3 sprigs fresh thyme
- 1–2 sprigs fresh rosemary
- 2 tablespoons extra-virgin olive oil
How to Make Mediterranean Baked Cod
1. Preheat the oven
Preheat your oven to 400°F (200°C).
Lightly grease a large baking dish with a little olive oil. I like using a dish that’s large enough to give the fish and vegetables some room rather than packing everything tightly together.
2. Prepare the seasoning
In a small bowl, mix together the olive oil, minced garlic, paprika, oregano, thyme, red pepper flakes, salt, and black pepper.
