🧄 Garlic Butter Salmon with Spinach & Mushrooms in Creamy Sauce

Mediterranean Style | Low-Carb | One-Pan

🛒 Ingredients (Serves 4)

For the Salmon

  • 4 salmon fillets (150–180 g each)

  • Salt & black pepper, to taste

  • 1 tsp paprika

  • 1 tsp dried oregano or thyme

  • 2 tbsp olive oil

  • 2 tbsp butter

For the Creamy Sauce

  • 4 cloves garlic, minced

  • 200 g (7 oz) mushrooms, sliced

  • 1 cup fresh spinach

  • ¾ cup heavy cream (or half-and-half)

  • ¼ cup chicken or vegetable broth

  • ¼ cup grated Parmesan cheese

  • ½ tsp Italian seasoning

  • ½ tsp red chili flakes (optional)

  • Juice of ½ lemon

For Garnish

  • Fresh parsley or basil, chopped

  • Extra Parmesan (optional)


👩‍🍳 Instructions

  1. Season the Salmon
    Pat salmon dry and season both sides with salt, pepper, paprika, and oregano.

  2. Sear the Salmon
    Heat olive oil and butter in a large skillet over medium-high heat.
    Sear salmon for 3–4 minutes per side until golden. Remove and set aside.

  3. Cook Mushrooms & Garlic
    In the same pan, add mushrooms and sauté for 4–5 minutes until browned.
    Add garlic and cook for 30 seconds until fragrant.

  4. Make the Creamy Sauce
    Pour in broth and cream. Stir in Parmesan, Italian seasoning, and chili flakes.
    Simmer gently for 3–4 minutes until slightly thickened.

  5. Add Spinach
    Stir in spinach and cook until wilted (about 1 minute).

  6. Return Salmon to Pan
    Nestle salmon back into the sauce. Spoon sauce over the top.
    Simmer for 2–3 minutes until salmon is cooked through.

  7. Finish
    Add lemon juice and adjust seasoning. Garnish with parsley or basil.
